Just my own personal two cents (take it for what it's worth - not that much XD)
-Usually one or two prompts jumps out at me right away. I pick whichever one makes me feel the most inspired, which I think will produce the best story. -Sometimes - if I'm stuck between two prompts, I'll look at their fic/what they comment on to see if they seem to prefer a particular character/pairing/genre. But usually not, and I just try and stay true to one of their requested prompts. -I'm sure if you wanted to fill more than one of the giftee's prompts, they would be ECSTATIC. XD Someone did that on the asoiaf_exchange last round.
