I definitely agree that there are always new things to find out about the past and the past characters, even in canon, and it really makes me sad how little fandom seems to care about the history of Westeros, with the exception of a few popular characters. I also find the time of the conquest really fascinating.
Soo, Stannis fics during the siege, let me see. I never bookmark anything, so I I'm sure there are more out there. There have been a couple of siege fics in past rounds of this exchange: How Long Have I Been in this Storm? And some shameless self-advertisement, I wrote this (http://archiveofourown.org/works/303337). Again, I'm sure there are more fics about the siege out there, but I haven't read an awful lot of fic in the last months, so I probably just don't know about them. :)
